- Cover, reduce heat and simmer for 30 minutes. (I cooked mine on low for close to an hour to make the meat tender and soft)..
- Stack the pineapple slices and cut into about 8 sections..
- Add pineapple, tomato, cucumber to the meat..
- Simmer, uncovered for 10 minutes. Let it rest for 5 minutes..
- Serve over fluffy rice..
